Quick And Simple Plant-Based Pancakes

In a time pinch? Try out this breakfast recipe!

Welcome back to another mile! Here is my go-to plant-based pancake recipe that’s packed with 25g of protein! It’s an easy, quick, and delicious recipe that does not include eggs, dairy, or refined sugar! All you need is a few pantry staples, your favorite protein powder, a blender, and a skillet! Serving: 1 (4-5 pancakes) Total Time: 10-20 minutes

Ingredients:

  • 1 scoop organic vegan protein powder

  • 1/2 cup whole grain rolled oats

  • 1/2 tsp baking powder

  • 1/4 tsp cinnamon

  • Sprinkle of nutmeg, cloves, and pumpkin spice

  • 3/4–1 cup water, adjust as needed

  • 1 flax egg or Bob's Red Mill egg replacer

  • Toppings of your choice

Steps:

  1. Prepare your flax egg - mix 1 tablespoon of flax meal with 3 tablespoons of water and let sit for at least 5 minutes.

  2. Simply put all of your ingredients into a blender and blend until smooth. You may need to adjust the water if the batter is too thick. Add water slowly so it does not become runny.

  3. Pour your batter into a greased pan over medium heat and bake for around 7–10 minutes on one side or until browned. Then flip your pancakes and bake for another 3–5 minutes or until browned. If the insides are still a bit wet, you could microwave them for 20–40 seconds!

  4. Serve warm with organic pure maple syrup and enjoy!
