DAIRY-FREE BLUEBERRY DESSERT!! (GF)

Hey Everyone! welcome back to another mile here on The Lifestyle Mile blog page! Today I have a delicious blueberry pastry dessert recipe for you! This recipe is dairy free, gluten free, and easy! Preheat: 375 degrees F

Serves: about 10 squares


Ingredients for the filling:

  • 2 cups blueberries

  • 1/4 cup honey

  • 2 tablespoons lime juice

  • 2 tablespoons water

  • 1/2 teaspoon vanilla extract

  • 4 tablespoons corn starch

Ingredients for the crust:

  • 3 cups gluten free rolled oats

  • 1 teaspoon cinnamon

  • 1 + 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/3 cup unsweetened apple sauce

  • 1/3 cup honey

  • 1 teaspoon vanilla extract

  • 2 tablespoons coconut oil

  1. Take a small sauce pan and bring the blueberries, honey, lime juice, and water to a boil over medium/high heat. Once boiling, stir in your vanilla extract and corn starch. Stir your mixture until it thickens and then turn off heat to cool. Set aside.

  2. Next take out your blender or food processor and blend ONLY 1 + 1/2 cup of your oats until powdered. Take your remaining 1 + 1/2 cups and combine that with your powdered oats, cinnamon, baking powder, and salt in a bowl. Now add in your unsweetened apple sauce, honey, vanilla extract, and coconut oil into the same bowl. Mix everything until well combined (I used an electric mixer). You mixture should look like dough.

  3. Take out your 8x8 baking pan and prepare with parchment paper or non-stick spray. Take about half your oat mixture and press down firmly to the bottom of your non-stick baking pan. Then take your blueberry sauce mixture and evenly spread on top. Finally, take the rest of your oat mixture and sprinkle it on top.

  4. Take your prepared baking dish and place in oven to bake for 30 minutes.

  5. Let your pastry dish cool for about 10 minutes and enjoy!!

  6. Store in refrigerator!
