The Best Vegan Gluten-Free Gingerbread Cookies

Hey everyone, welcome back to another mile! Merry Christmas and happy holidays! Today I have a delicious gingerbread cookie recipe just in time for Christmas! This is for my friends looking for a dairy-free, gluten-free, plant-based, and easy holiday indulgent dessert! They are absolutely to die for, light, fluffy, and flavorful, and for the non-vegans, you would never know they were vegan or gluten-free! A frosting recipe is included! Enjoy!

 

Preheat: 325F

Yield: About 20 cookies

Extra prep notes: Prepare 1 flax egg (1 tablespoon flax meal, 3 tablespoons water). Will need to chill in the fridge overnight (or at least an hour).


Ingredients:

Dry

  • 3 cups Gluten-Free flour (I used my favorite flour by King Authur linked here)

  • 1/2 cup coconut sugar

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 tablespoon ginger

  • 1 tablespoon cinnamon

  • 1/4 teaspoon allspice

  • 1/4 teaspoon clove

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon cardamom

  • 1/2 teaspoon salt

Wet

  • 1 stick of vegan butter (1/2 cup)

  • 1/2 cup molasses

  • 1/2 cup almond milk or Ripple

  • 1 tablespoon vanilla

  • 1 flax egg

Icing

  • 1 stick of vegan butter (1/2 cup)

  • 3 cups powdered sugar

  • 1 teaspoon vanilla

  • 4-5 tablespoons almond milk or Ripple


Steps

  1. Combine your dry ingredients in a bowl and set aside. Then beat your wet ingredients with an electric mixer in a larger bowl. Slowly add your dry ingredients to your wet mixture and watch your dough form. Cover the dough in parchment paper and place it in a plastic bag. Let this chill overnight or for at least one hour.

  2. Roll out dough over a floured surface (flour linked here) with a rolling pin until 1/4 inch thick. This batter is very easy to manipulate and can be re-rolled multiple times! Transfer to a non-stick baking sheet and bake for 15 minutes at 325F. Watch closely.

  3. For the icing, beat the butter, powdered sugar, vanilla, and almond/ripple milk slowly while mixing. Decorate your cookies once they have completely chilled.

  4. Enjoy (you could even microwave for 10-15 seconds)!
