EARTHY ANDY's Cauliflower Chickpea Masala Dish! (Vegan+GF)

Today I have yet another EarthyAndy recipe right from her delicious cookbook...AKA the best plant-based recipe book EVER!!! This vegan and GF dish is to-die-for!! You need to try it out! Ingredients:

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground turmeric

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • cracked black pepper

  • 1 tablespoon extra virgin olive oil or coconut oil

  • 1 medium onion chopped

  • 3 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 medium head of cauliflower, cut into small florets

  • 1 can (15 oz) canned chickpeas, drained

  • 1 can (15 oz) organic no sugar added tomato sauce

  • 1 cup filtered water

  • 1/2 cup canned unsweetened coconut milk

  • 1/4 cup fresh cilantro leaves, roughly chopped

Steps: (pictures below!)

  1. In a small bowl combine your cumin, turmeric, paprika, salt, and black pepper together.

  2. In a large saucepan, heat the olive oil or coconut oil over medium-high heat. When the oil is shimmering go ahead and add in your onion, garlic, and ginger. Cook this until the onion is softened over medium heat for about 5 minutes.

  3. Now add in your spices and cook for another minute.

  4. Add your chopped cauliflower to the pan and continue to cook on medium heat for about 10 minutes until your cauliflower is softened. (If your spices began to burn, you may add in a bit of water!)

  5. Then add in your chickpeas, tomato sauce, and vegetable broth or water and stir until well combined. Simmer over medium-low heat for 10-15 minutes.

  6. Turn your heat completely off and stir in your coconut milk first and then your cilantro.

  7. Serve and enjoy!
