Guilt-Free Chocolate Chip Cookies

Today I have a HEALTHY plant-based chocolate chip cookie recipe right from the Plant Over Processed cookbook by Earthy Andy (Andrea Hannemann). This recipe is also great for edible cookie dough as it is vegan, gluten-free, and dairy-free!! Please note: I do not own this recipe.

Preheat oven: 350 degrees F

Bake: 19-23 minutes

Serves: 10-12 cookies

Ingredients:

- 1 1/2 cups cooked organic chickpeas

- 1/2 cup all-natural peanut butter (or almond butter)

- 1/3 cup maple syrup

- 2 teaspoons pure vanilla extract

- 1/2 teaspoons baking soda

- a pinch of salt

- 1/2 cup vegan dark chocolate chips


  1. Make sure your oven is preheated to 350 degrees F. Line a baking sheet with parchment paper.

  2. In a food processor, blend the 1 1/2 cups cooked organic chickpeas, 1/2 cup all-natural peanut butter (or almond butter), 1/3 cup maple syrup, 2 teaspoons pure vanilla extract, 1/2 teaspoons baking soda, and a pinch of salt until smooth. This should only take about 45 seconds-1 minute. DO NOT add in the chocolate chips yet. I accidentally did and I had to add more at the end. It is not the end of the world if you do, just remember to wait.

  3. Now fold in 1/2 cup of vegan dark chocolate chips with a spatula.

  4. Take your dough and roll it into even size balls and place it on your baking sheet. Bake for 19-23 minutes or until golden brown!!

  5. Let cool and enjoy!!!

NOTE: *I accidentally added in the chocolate chips too early...(don't do this)
