HARVEST MUFFIN RECIPE (vegan and gluten-free)

Hey everyone! Welcome back to another mile over here on The Lifestyle Mile blog page! I hope your fall season is going amazing so far! I hope you are staying in the Halloween spirit and cherishing every moment of this month! Today I have a delicious recipe to share with you! This recipe is the first-ever fall-themed recipe to kick off this season! It is a vegan and gluten-free harvest muffin recipe! These muffins are to-die-for! They are an apple and cinnamon mixture of delight! They will satisfy all of your fall dessert cravings! Without further ado, let’s get right into it! Ingredients you will need:

  • 2 cups of gluten-free flour

  • 1 tsp baking powder 

  • 1 tsp baking soda 

  • 1/2 tsp salt 

  • 1 tsp cinnamon 

  • ½ teaspoon of ground allspice

  • 1/2 cup brown sugar

  • 1 ½ cup applesauce 

  • 1/2 cup almond milk or milk of your choice

  • 1 tsp vanilla 

  • 1 tsp apple cider vinegar 

  • 1/2 cup apple, diced



Begin by preheating your oven to 350.


Step one: Begin by collecting all of your necessary cookware and ingredients.


Step two: You will begin by dicing your apple into thin and small slices.


Step three: Next, grab a large bowl and add in all of your ingredients, starting with dry and moving to wet ingredients. 2 cups of gluten-free flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, ½ teaspoon ground allspice, 1/2 cup brown sugar, 1 ½ cup applesauce, 1/2 cup almond milk or milk of your choice, 1 tsp vanilla, 1 tsp apple cider vinegar, 1/2 cup apple (diced). Mix until well combined. Your batter should be clumpy and moist but not liquidy. 


Step four: Get your muffin tin and spray it with non-stick baking spray (you may use cup cake liners). Then, pour your batter into the tin. 


Step five: Place in the oven and bake for 25 minutes. 


Step six: Let cool and enjoy!!!
