Hey everyone!! Welcome back to another mile here on The Lifestyle Mile blog page! Today I will be sharing a DELICIOUS homemade oatmeal cookie recipe!! This recipe is healthy, vegan, gluten-free, quick, and easy! Without further ado, let's get right into it! If you try this out, be sure to take a picture and tag me on Instagram!! Ingredients:
- 1/2 cup gluten-free flour
- 1 + 1/4 cups gluten-free rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup melted coconut oil
- 1/4 cup coconut sugar
- 1 flax egg (to make 1 vegan egg: 1 tablespoon flax meal + 3 tablespoons warm water and let sit for at least 15 minutes)
- 1 teaspoon pure vanilla extract
- 1 tablespoon pure maple syrup
- Craisins or raisins (optional)
Preheat oven to 350 degrees
Step one: Begin by collecting pessary cookware. This includes 1 large bowl, 1 small bowl, spoon, ingredients, baking sheet, and parchment paper.
Step two: Begin by making 1 flax egg and let sit in your small bowl (to make 1 vegan egg: 1 tablespoon flax meal + 3 tablespoons warm water and let sit for at least 15 minutes). I will leave a picture below of what mine looks like!

Step three: Now add all of your dry ingredients into one large bowl. This includes 1/2 cup gluten-free flour, 1 + 1/4 cups gluten-free rolled oats, 1/2 teaspoon baking powder, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon salt. Take your spoon and mix well.

Step four: Now add in all your wet ingredients. This includes 1/4 cup melted coconut oil, 1/4 cup coconut sugar, 1 flax egg, 1 teaspoon pure vanilla extract, and 1 tablespoon pure maple syrup. Also, add craisins or raisins if you would like (optional). Mix all of your ingredients well.

Step five: Line your cookie sheet with parchment paper and form batter into cookies. These cookies do not expand so you may place them relatively closely. I will leave a picture below!

Step six: Bake for 15-18 minutes.
Step seven: Take out and let cool for at least 10 minutes and enjoy!!
