HEALTHY PUMPKIN PIE RECIPE



Hey everyone!! Welcome back to another mile here on The Lifestyle Mile Blog page!! Today I have a delicious and healthy pumpkin pie recipe just in time for Thanksgiving!! This recipe is dairy-free, vegan, and gluten-free!! Stick around if you wanna get in on this yummy dessert and enjoy!

Preheat Oven: 425 + 350 degrees F (see instructions)

Ingredients:

Crust:

  • 1 1/2 cups of gluten-free oat flour (I used almond flour)

  • 1/4 cup of peanut butter

  • 1/4 cup of coconut oil

  • Just a pinch of salt

  • 1-3 tablespoons of water (see instructions)

Filling:

  • 15 ounce can of pumpkin puree

  • 1/4 cup of peanut butter

  • 1/2 cup of maple syrup

  • 3/4 cup of almond milk

  • 3 tablespoons of tapioca starch

  • 1 teaspoon of pumpkin pie spice

  • 1 teaspoon of cinnamon

  • 1 teaspoon of vanilla extract

  1. Combine your 1 1/2 cups of gluten-free oat flour (I used almond flour), 1/4 cup of peanut butter, 1/4 cup of coconut oil, and just a pinch of salt in a large bowl. Slowly begin to add in your water until your dough forms. Begin with 1 tablespoon and add more if needed. Do this process carefully so you do not over-add water.

  2. Take your dough and roll it out between two pieces of parchment paper. Then, place your dough into a pie pan.

  3. Now take your 15 ounce can of pumpkin puree, 1/4 cup of peanut butter, 1/2 cup of maple syrup, 3/4 cup of almond milk, 3 tablespoons of tapioca starch, 1 teaspoon of pumpkin pie spice, and 1 teaspoon of vanilla extract and it all into a large bowl. Mix by hand or with an electric mixer.

  4. Next, take your filling and slowly pour it into the crust.

  5. Bake this for 15 minutes at 425 degrees F. After 15 minutes, you need to reduce the heat to 350 degrees F and bake for another 40–45 minutes or until browned overtop.

  6. Let cool and chill overnight in the fridge.

  7. Enjoy!!
