Pumpkin Spice Granola Recipe! (homemade, vegan, gluten free)

Hey everyone! Welcome to another mile over here on The Lifestyle Mile blog page! Today I have a delicious fall-themed, homemade, pumpkin spice, vegan, and gluten-free granola recipe!! This recipe is quick and more affordable than buying granola at the store! I highly recommend you try it out! It is delicious and will satisfy all of your granola cravings! Ingredients: 

  • 3 cups old fashioned rolled oats (gluten-free)

  • 1/4 cup pumpkin puree

  • 1/2 teaspoon vanilla

  • 1/2 teaspoon pumpkin pie spice

  • 1/2 cup maple syrup

  • 1/3 cup coconut oil, melted

  • 1/2 teaspoon sea salt

  • Optional: dairy-free dark chocolate chips or any other add-ins of your desire


Start by preheating your oven to 325 degrees. 


Step one: Collect your necessary cookware and ingredients. 


Step two: Take your large bowl and add all of your ingredients into one bowl. That includes 3 cups old fashioned rolled oats (gluten-free), 1/4 cup pumpkin puree, 1/2 teaspoon vanilla, 1/2 teaspoon pumpkin pie spice, 1/2 cup maple syrup, 1/3 cup coconut oil, melted, 1/2 teaspoon sea salt. If you are going to add in chocolate chips, do not add them in now.. they will melt in the oven! Mix all of your ingredients until well combined! 


Step three: Take a cookie sheet and line with parchment paper. Pour your mixture or batter onto your cookie sheet and spread out evenly. 


Step four: Cook for 40 minutes or until oats are crispy and dry. To avoid burning on some parts, take a spoon and mix around the oats every 5-10 minutes. 


Step five: Let cool for 10 minutes. If you decide to add chocolate chips, make sure your granola is fully cooled before adding them. If they project heat, your chocolate will melt. 


Step six: Enjoy!
