Hey everyone! Welcome to another mile! Today I have a flavorful, light, and crispy pumpkin spice cookie recipe for you just in time for the Holiday season! Not only are they cozy and full of nostalgia but they are seriously to die for! This recipe is vegan, gluten-free, dairy-free, simple, easy to make, and absolutely delicious! I cannot wait for you to try it out! Enjoy!
Preheat: 350F
Cook Time: 14-17 minutes (depending on size)
Yield: About 12 cookies
Prep notes: Make one flax egg at least 5 minutes prior (1 tbsp flax meal, 3 tbsp water)
Ingredients
Dry ingredients:
1 1/2 cup almond flour
1 1/4 cup oat flour
1/2 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon
1 tsp pumpkin pie spice
1/8 tsp clove
1/8 tsp allspice
1/2 tsp ginger
Wet ingredients:
1/2 cup vegan butter room temp
1/2 cup pure cane or coconut sugar
1/2 cup of 100% pumpkin puree
1 tsp vanilla
1 flax egg (1 tbsp flax meal in 3 tbsp water let sit for at least 5 minutes)
Coating:
A sprinkle of coconut or pure cane sugar overtop
Steps
Add your dry ingredients into a small bowl, mix, and set aside. In a larger bowl, combine all of your wet ingredients and mix well. Now slowly add in your dry ingredients and combine. Your mixture should appear moist and clumpy.
Prepare a baking sheet and divide your batter up into 2-inch balls. Flatten each cookie to about 4 inches in diameter and space them about an inch apart (they will not rise or spread). Bake for 14-17 minutes or until crispy and browned. Let cool on a cookie sheet.
Sprinkle with coconut or pure cane sugar and serve warm! Enjoy!
