EARTHYANDY's Hempies Dessert! (Vegan+GF)

Hey everyone!! Welcome back to another mile here on The Lifestyle Mile blog page!! Today I will be re-sharing an EarthAndy's (Andrea Hannemann) vegan and gluten-free dessert recipe right from her cookbook!!

This plant-based recipe book is BY FAR the best one I have found yet!! It is a staple in my kitchen! I highly recommend you buy this recipe book and try it out... you won't regret it!! Ingredients:

  • 1 1/2 cups + 2 tablespoons smooth NATURAL peanut butter

  • 1/3 cup maple syrup or brown rice syrup

  • 1 teaspoon pure vanilla extract

  • 1/3 cup hemp hearts (I used chia seeds

  • 3 cups organic crispy rice cereal

  • 1 1/2 cups vegan chocolate chips


Step one: Take a large bowl mix 1 1/2 cups of smooth natural peanut butter, 1/3 cup of maple syrup or brown rice syrup, and 1 teaspoon of pure vanilla extract together until smooth.


Step two: Now stir in your hemp hearts or chia seeds and organic crispy rice cereal into your batter and stir until well combined.


Step three: Line an 8-inch brownie pan with parchment paper. Then, take your mixture and pat, and pack down into the pan.


Step four: Combine your 1 1/2 cups of vegan chocolate chips and the remaining 2 tablespoons of peanut butter together in a medium-sized microwave-safe bowl. Now, microwave on high for 30 seconds then stir, and then microwave for another 30 seconds and stir again. If your combination is not fully melted, repeat this process once more.


Step five: Spread your melted chocolate peanut butter over your crispy rice base in the pan evenly. Place in the freezer for 30 minutes.





Step six: Remove from freezer and let sit for a few minutes then cut into 2 inch small squares.



Step seven: Enjoy!! Store in an airtight container in the freezer!
