Last Minute Christmas Ginger Cookies! (vegan, guten-free)

Hey everyone! Welcome to another mile here on The Lifestyle Mile! Merry Christmas Eve!! I hope today is filled with Christmas cheer and celebration with family! I have one last recipe for you to end 2020, and it is to-die-for!!! Today I have a ginger cookie recipe!! This is a different recipe from the one I posted recently! It is better! This recipe is quick, easy, vegan, gluten-free, and absolutely delicious!! Without further ado, let's get right into this delicious recipe!! Ps. Ingredients:


- 1/6 cup of vegan butter

- 1/4 cup of dark brown sugar

- 1/4 cup of maple syrup

- 1/8 teaspoon of salt

- 1 teaspoon ground ginger

- 1/2 teaspoon ground cinnamon

- 1 cup of gluten-free flour (extra for when rolling out)

- 1/4 teaspoon of baking soda

- 1/4 teaspoon of baking powder

- 1 1/2 teaspoons of water

- Powdered sugar for topping



Preheat oven to 350.


Step one: Begin by collecting all of your necessary cookware. This includes a medium-sized bowl, an electric mixer, measuring cups, ingredients, parchment paper, cookie cutters, a rolling pin, and a baking sheet.


Step two: Now you will take your medium-sized bowl and add in all of your ingredients. Start with your dry ingredients and then move onto adding in your wet ingredients. You may combine them all into one bowl and mix. This includes 1/4 cup of dark brown sugar, 1/8 teaspoon of salt, 1 teaspoon ground ginger, 1/2 teaspoon ground cinnamon, 1 cup of gluten-free flour, 1/4 teaspoon of baking soda, and 1/4 teaspoon of baking powder. Now your wet ingredients 1/4 cup of maple syrup, 1/6 cup of vegan butter, and 1 1/2 teaspoons of water.


Step three: Take your electric mixer and mix until well combined. This may take at least two minutes. Once it is fully combined, it will look like a thick dough, not too liquidy and not too dry. I will leave an image below for reference.



Your dough should look similar to this...



Step four: Take your baking sheet and set it aside. I like to prepare my cookies directly on parchment paper. Go ahead and cut yourself a piece of parchment paper and sprinkle some of your gluten-free flour over top. Now take your rolling pin and evenly roll out your dough. It should be about 1/4 inches thick but you may eye-ball it to your desire. Take your cookie cutter and shape dough to your desire.



After freshly rolled, cut, and uncooked...



Step five: Once you have cut out all of your cookies, you may transfer them over to the baking sheet.


Step six: Bake for 7-11 minutes based on the thickness of your cookie. Check frequently so they do not burn. Once they have baked, take them out and let cool for at least 10 minutes.

Step seven: Now take your powdered sugar and sprinkle over top for decoration!
