THE BEST VEGAN Christmas sugar cookie recipe!! (gluten-free)

Hey everyone! Welcome back to another mile here on The Lifestyle Mile blog page! Today I am sharing THE BEST vegan Christmas sugar cookie recipe! This is a great alternative to a regular Christmas Cookie if you are looking to cut out a few things such as dairy, eggs, etc. This recipe is gluten-free as well! It is also one of the easiest and quickest recipes I have made! Ps. If you try any of these out, be sure to take a picture and tag me on Instagram!! I would love to repost your creation!!



 


Ingredients:

  • 1 stick vegan butter softened

  • 1/2 cup granulated sugar

  • 4 tablespoons plant-based milk (I use Ripple)

  • 1 1/2 teaspoons vanilla extract

  • 1 teaspoon baking powder

  • 1 1/2 cups gluten-free flour

  • Sprinkles (decoration)



Preheat oven to 350 degrees.



Step one: Begin by collecting all of your necessary cookware. This includes a large mixing bowl, a large mixing bowl, electric mixer, 2 cookie sheets, parchment paper, and your ingredients.


Step two: Take your large bowl and begin by adding your wet ingredients into it. This includes 1 stick of vegan butter, 4 tablespoons of plant-based milk, and 1 1/2 teaspoons of vanilla extract. Now take your electric mixer and beat until fully combined and set aside.


Step three: Now take your medium bowl and add in all of your dry ingredients. This includes 1/2 cup granulated sugar, 1 teaspoon of baking powder, and 1 1/2 cups gluten-free flour. Now hand mix until well combined.


Step four: Take your dry mixture and add it to your wet mixture and fully combine it with an electric mixer. Your batter should slowly begin to form into a thick and stiff dough. If your batter is too dry, you may slowly add your plant-based milk 1 tablespoon at a time until dough forms. I will leave a picture below for more context!



Step five: Now you are going to shape your dough into cookies!! Begin by taking a small portion of the dough and rolling it into a ball. Once your little ball is rolled, go ahead and flatten it a bit. Make sure your cookie is still thick so do not fully flatten it to where it is thin. Now place on your cookie sheet! (see picture below)


After the dough is rolled and formed (not cooked or decorated)...


Step six: Now take your dough and decorate with sprinkles to your desire!

Step seven: Place your cookies into the oven for about 6-10 minutes based on the size of your cookies! Make sure you check on them frequently so they do not burn!


Step eight: Let cool and enjoy!!!
