VEGAN Chocolate Chip Cookies (gluten-free)

Welcome back, everyone! Today I have a super delicious VEGAN chocolate chip cookie recipe! I found this off Pinterest, changed it up a bit, tested it out, and loved it! I am so excited to share this super yummy, vegan dessert with you, so let’s get right into it! Ps. These are gluten-free as well!

Ingredients:

  • 2 ¼ cups of gluten-free flour 

  • 1 teaspoon of salt

  • 1 teaspoon baking soda

  • 1 teaspoon of baking powder

  • ½ cup + ⅔ cup of all-natural pure organic coconut palm sugar

  • ⅓ cup of unsweetened applesauce

  • ½ cup vegan butter (melted)

  • ½ cup coconut oil (melted)

  • Vegan dark chocolate chips, raisins, or dried cranberries (optional) 


To start, preheat your oven to 350 degrees. 


Step one: (This recipe makes about 20 cookies or so.) Start by gathering all of the necessary cookware such as measuring cups, electric mixer, spoon, small glass bowl, large bowl, medium bowl, parchment paper, cooking sheet.


Step two: Next you can add all of your dry ingredients into a medium-size bowl. This includes 2 ¼ cups of gluten-free flour, 1 teaspoon of salt, 1 teaspoon baking soda, 1 teaspoon of baking powder, ½ cup + ⅔ cup of all-natural pure organic coconut palm sugar. Mix until well combined and set aside.


Step three: After combining your wet ingredients, you can go ahead and add all of your wet ingredients into your other available bowl. This includes ⅓ cup of unsweetened applesauce, ½ cup vegan butter (melted), ½ cup coconut oil (melted). Mix these ingredients until well combined. 


Step five: Add all of your dry ingredients into your wet ingredients and begin mixing with an electric mixer. You may also mix by hand but if you have an electric mixer, I recommend using that for a quicker result. 


Step six: Next, take the “add-in” of your choice (choc chips, raisins, dried cherries) and begin mixing those into your batter. For this step, you can just eyeball the amount to your desire because there is really no right or wrong!


Step seven: Next you may grab your parchment paper and line a cookie sheet. Take small portions of your batter and form into balls, then place on a cookie sheet and flatten/shape into cookie-form. (This batter does not spread substantially but you still will want to add space in between each pre-cooked cookie to your discretion.) 


Step eight: Pop these into the oven at 350 degrees and cook for 11-14 minutes. 


Step nine: Once these brown on the top, you may take them out and cool for about 10 minutes.


Step ten: Enjoy your delicious cookies!
