VEGAN Cinnamon Pop Tarts!! (gluten-free)

Hey everyone! Welcome to another mile on The Lifestyle Mile blog page! Today I will be sharing a vegan and gluten-free pop tart recipe! I am super excited because these are super delicious and an amazing alternative to your traditional cinnamon pop tart! You need to try this recipe out because it is so yummy! I was inspired by a Pinterest post, tried it out, altered the recipe, made it my own, and loved it!! Without further ado, let’s hop right into it!! Ps. I will begin with the pastry recipe, then move on to the filling recipe and finally the final steps of putting everything together!



Pastry Portion:


DISCLAIMER: You may substitute any of these recipe ingredients to your own needs. These are just examples of the products I use. 


Ingredients: (makes 10 pop tarts)

  • 2 cups on gluten-free, dairy-free baking flour 

  • ½ teaspoon of salt

  • 2 tablespoons of pure cane sugar 

  • 1 ½ sticks of vegan butter

  • ¼ cup of water (you may add more depending on batter consistency)


(Begin process ONE hour before finishing the rest of the recipe because the batter needs to chill)


Step one: Gather all of your cookware such as a large bowl, food processor, measuring tools, and plastic wrap. 


Step two: Add in your dry ingredients into your food processor:  2 cups of gluten-free, dairy-free baking flour, ½ teaspoon of salt, and 2 tablespoons of pure cane sugar. Start combining these by grinding them in your food processor but do not over mix. (you will fully combine once your other ingredients are added)


Step three: Next add in your 1 ½ sticks of butter until well combined into your fine processed dry ingredients. Then, slowly add in your ¼ cup of water and watch your dough form. Your batter should appear doughy and not too dry. If your batter is dry, simply add in more water.


Step four: This is the final step for this portion. Now take your dough and wrap it into plastic wrap and chill in the refrigerator for at least one hour. 



Filling Portion:


Start by preheating your oven to 375 degrees. 


Ingredients: 

  • 2 tablespoons of cinnamon

  • 2 teaspoons of applesauce (I used unsweetened)

  • 1 teaspoon of vanilla extract 


Step one: Gather all of your cookware; you will need an electric mixer or hand mixer, medium-sized bowl, and measuring tools. 


Step two: Next add all of your ingredients into your medium-sized bowl:  2 tablespoons of cinnamon, 2 teaspoons of applesauce (I used unsweetened), and 1 teaspoon of vanilla extract. Then, take your electric or hand mixer and mix these ingredients until well combined and set aside. 



Final Steps:


Step one: Gather all of your cookware such as baking sheet, parchment paper, baking brush, Ripple dairy-free plant-based milk, flour, and rolling pin. 


Step two: Take your batter out of your refrigerator. Then, unwrap and layout flour. Take your floured rolling pin and roll out the batter. (be careful because the batter will be fragile) Once your batter is about ¼ inches thick, cut into pairs of large rectangles and set aside. Repeat this process until the batter is gone. Place on a baking sheet.


Step three: Scoop your filling onto one side of your uncooked pastry.  Then take the other side of the pastry and place it on top of the filling-side and pinch sides to complete your full uncooked pop tart. 


Step four: Take your baking brush and brush on a layer on Ripple plant-based dairy-free milk over top. Then, take a knife and make two slits to create a plus sign on the top. 


Step five: Place the full pop tart into your preheated oven and cook for about 25-30 minutes. Let cool for 10 minutes.


Step six: Enjoy your delicious vegan pop tart!
