VEGAN Gingerbread men recipe!! (gluten-free) + vegan frosting recipe!

Hey everyone! Welcome back to another mile over here on the Lifestyle Mile blog page! Today I have our first recipe of the season!!! This VEGAN gingerbread men recipe is a great alternative if you are looking to cut a few things like dairy, eggs, butter, etc. This recipe is gluten-free as well! I hope you enjoy it! I will also add a quick, vegan, and easy frosting recipe at the very bottom if you would like to decorate your gingerbread men (I kept mine simple with no frosting)! Ps. Ingredients: (chill time - 30 minutes)


  • 3 ½ cups gluten-free flour (plus a bit more for surface)

  • 1 ½ cups sugar

  • 2 tsp ginger

  • 2 tsp cinnamon

  • ½ tsp nutmeg

  • 1 tsp sea salt

  • ½ cup vegan butter

  • ½ cup of coconut oil

  • ½ cup molasses

  • ⅔ cup water (or more if needed)


Preheat your oven to 250 degrees Fahrenheit.



Step one: Go ahead and collect all of your necessary cookware and prepare your workspace. You will need measuring cups, a few baking sheets, parchment paper, mixing utensils, an electric mixer, 1 large bowl, 1 medium bowl, plastic wrap, a rolling pin, and a gingerbread cookie cut out cutter.


Step two: Take your large bowl and add in all of your dry ingredients. That includes 3 ½ cups gluten-free flour, 1 ½ cups sugar, 2 tsp ginger, 2 tsp cinnamon, ½ tsp nutmeg, and 1 tsp sea salt. Mix until well combined with fork or spoon, and set aside.


Step three: Take your medium bowl and add in all of your wet ingredients. That includes ½ cup vegan butter, ½ cup of coconut oil, ½ cup molasses, and ⅔ cup water. Mix until well combined with an electric mixture.


Step four: Take your wet mixture and add it to your dry mixture. Take your electric mixer and mix until well combined. Your mixture should now look like dough. Then, take your hands and form a ball with your dough. Cut yourself a piece of plastic wrap, and lay it out on the surface. Place your dough ball onto plastic wrap and wrap your dough inside. Once you have fully covered your dough in plastic wrap, chill in your fridge for at least 30 minutes.


Step five: Once your dough has chilled, unwrap. Layout a sheet of parchment paper and sprinkle gluten-free flour over top. I suggest cutting out your gingerbread directly on your parchment paper to ensure an easy transfer onto your baking sheet. Take a portion of your dough and place on lightly floured parchment paper. Now, lightly flour the top of the dough or lightly flour your rolling pin. Take your rolling and begin to roll out your dough. It should be about ¼ inches thick. Then, take your cookie cutter and cut out gingerbread men. This recipe does not expand greatly so you may cut them out relatively close but still leaving a bit of room between cookies. Repeat this step until the dough is gone.


Step six: Transfer onto your baking sheet (you may need more than one). Then bake for 12-15 minutes depending on the thickness of your cookie. You may check my sticking a toothpick in the middle.


Step seven: Let cool and enjoy!!!!!

Frosting recipe:


Ingredients:

  • ½ cup of vegan plant-based butter (cold)

  • 1 ½ cups of powdered sugar

  • 2 teaspoons of vanilla extract

Step one: Begin by taking an electric mixer and beating the butter until soft and light.


Step two: Add in your remaining ingredients and mix until well combined. Your mixture should now look like a thick frosting.


Step three: Add into a piping bag and enjoy!!! (You may also use a baggy and cut the corner!)
