Vegan sugar cookie recipe!

Hey everyone! I have yet another delicious vegan recipe! I found this recipe searching for a fun dessert for father's day! One of my dad's favorite things is his baby blue 1973 Ford Bronco! I decided to surprise him with homemade mini vegan Bronco cookies! This recipe is on Pinterest and it includes a vegan sugar cookie recipe, along with a delicious frosting recipe! I did make a few alterations so stay tuned for those! First I will let you guys know how to make the sugar cookie recipe, then we will move onto the frosting recipe below that! 


The ingredients you will need are:


  • 3/4 cup vegan butter, slightly softened

  • 3/4 cup granulated sugar

  • 2 tablespoons unsweetened almond milk

  • 1 tablespoon cornstarch

  • 1 teaspoon vanilla extract

  • 2 1/4 cups all-purpose flour 

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt


The Pinterest recipe called for almond extract as well but I decided to not include that ingredient due to the fact my family does not prefer the taste. I found that the cookies were delicious without this ingredient!


Step one: Start by preheating your oven to 350 degrees and collect all of the kitchen wear and ingredients that you will need to complete this baking process. That includes measuring cups, different size bowls, parchment paper, a mixer, and a cookie-cutter. This step is of course optional but having your necessities easily accessible is very helpful when your hands are covered in baking ingredients during the baking process. 


Step two: Next you will need to use your medium or large bowl and began by adding in ¾ cups are vegan butter. Next, grab out your electric mixer and beat up the butter for about one minute or until smooth and creamy. (you can mix by hand but it will take longer) 


Step three: Once you have completed beating the butter, add in your ¾ cups of sugar into that mixture and continue mixing for about 2 or 3 minutes or until light and fluffy. 


Step four: Now go ahead and add in your 2 tablespoons of almond milk, 1 tablespoon of cornstarch, and your 1 teaspoon of vanilla extract. Then take your electric mixer and mix until all ingredients are fully combined. This may take you about a minute or so. 


Step five: Next add in only one cup of your flour to your wet mixture and then add in your ½ teaspoon baking powder and your ½ teaspoon salt. Make sure everything is well combined, and once everything is mixed all together, you can add in your final 1 ¼ cup of flour. Once all of your ingredients are well combined, according to the Pinterest recipe, your mixture should feel like playdough when worked in your hands but crumbly in the bowl. If it is not too wet, you should be totally fine! (I wanted to make this recipe gluten-free as well therefore, I decided to substitute the regular flour with almond flour. Once I finished adding in all of my ingredients, I noticed that my mixture was too wet so I decided just to add in some all-purposed flour to try and fix the consistency and it worked. I believe if you use regular flour, you will not have this problem!)


Step six: Next you are going to take out some parchment paper, cut a piece, and lay it out on a flat surface. Lightly sprinkle some flour throughout the service of your first layer of parchment paper. Then take ONLY half of your mixture and place it on the parchment paper. Take a rolling pin and roll out the dough until it is about ¼ inches thick. (flour your rolling pin before) After that, lightly sprinkle some more flour on the top of the dough and add another layer of parchment paper on top. Pop this in the refrigerator for about 45 minutes to 1 hour. This will allow your dough to chill. Then repeat this preparation step for the other half of your mixture right after you put your first half in, to chill. 


Step seven: Begin by preparing parchment paper-lined pans. After your dough has chilled, take out only one and begin to use a cookie-cutter and create the shape of your choice. Then carefully transfer your cookie cutout onto the pan covered with parchment paper and repeat this process until your dough is all used up. (you may keep collecting the excess pieces and forming them together to make as many cookies as possible) 


Step eight: Pop these cookies into the oven for about 8-10 minutes at 350 degrees. When they are finished baking, take out and let cool for at least 10 minutes or until cooled. 

ICING TIME!!!


(I recommend you begin making the icing while your cookies are cooling.) 


The ingredients you will need are:


  • 1 1/2 cups powdered sugar

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon light corn syrup (can omit, but it makes the icing very shiny)

  • 1-2 tablespoons unsweetened almond milk


The ingredients listed above are the original measurements but I decided to double the measurements to make sure I had enough icing. If you want double the amount of icing, just double the measurements listed above!



Step one: Start by preparing your kitchenware needed for this recipe. This includes mixing bowls, spatula, mixture, and piping bags. You may also need food coloring depending on if you are coloring your icing or not. 


Step two: Start by grabbing your medium-size bowl and add in all of your ingredients. 1 1/2 cups powdered sugar, 1/2 teaspoon vanilla extract, 1 tablespoon light corn syrup (can omit, but it makes the icing very shiny), and 1 1/2-2 tablespoons unsweetened almond milk. (the amount of almond milk you add, depends on the thickness of your frosting. If you want it thicker, add less, and if you want it thinner and runnier, add more!)


Step three: Mix all of your ingredients until well combined. Your mixture should look smooth and glossy. 


Step four: You may color the icing to your choice and put the icing into piping bags to prepare for the icing process. 


Finally, once your cookies are cooled, begin by icing them to your desire. Once you're finished icing, simply chill them in your refrigerator for several hours. The icing takes multiple hours to harden (I left my cookies overnight). Your cookies will stay soft at room temp for about a week or so!
